This is a special a page for Blackburn South Probus members to publish their “favourite recipes” Including ones that have been inherited from family members many years ago or simply favourite ones that have been thoroughly practiced and enjoyed over time.

Main meals

1 .  JARRED CHOPS

Recipe provided by  Anne Grierson from her collection of favourite recipes

Ingredients

1 kg lamb chump chops (if unavailable use lamb rump steaks)

4 tablespoons plain flour

1 tablespoon Worcestershire sauce

1 tablespoon vinegar

3 cups water

2 teaspoons brown sugar

4 tablespoons tomato sauce

1 teaspoon Vegemite

1 teaspoon curry powder

¼ teaspoon mixed spice

1 teaspoon wholegrain mustard

Method

  1. Cut fat from the chops.
  2. Mix all the ingredients, place in baking pan and add the chops.
  3. Cover and cook in moderate oven for 1¾ hours.

2.  SALMON MORNAY.

Ingredients

600m milk

2 tablespoons cornflour

1 small onion, diced

1 cup grated cheese

200g red salmon

3 hard boiled eggs, quartered

¼ cup breadcrumbs

1/3 cup grated cheese, for topping

Method

  1. In a large saucepan, slowly bring the milk to near boiling. Mix the cornflour with some additional milk until fully combined. Stir in the hot milk until sauce becomes thick and start to boil, turn down.
  2. Add the onion and stir through. Add the cheese and stir until fully melted in. Gently stir in the tinned salmon and eggs.
  3. Transfer to a baking dish then sprinkle with the breadcrumbs and grated cheese. Bake in a moderate oven until the cheesy crust has melted, or about  15 minutes.

1. Carrot Cake

Recipe from Orbost Vic. provided by Bryan. Member no.96

Sift the the following ingredients together 4 times:

2 cups bread flour

2 level teaspoons cinnamon

¼ teaspoon cloves

1 tablespoon almond meal

 Beat:

½ cup macadamia oil and ½ cup sunflower oil together with 1½ cups caster sugar

Gradually add ½ cup carrot juice

 4 small egg yolks

Beat:

Egg whites -gradually add ¼ cup caster sugar

Fold in oil mixture, flour (2 cups grated fine and coarse).

Line a 9 inch (23 cm) round tin.

Pre -heat oven to 160 degrees C. Turn back to 140 degrees C FF.

Bake 1¼ hours.

Cool in tin for 10 minutes -turn out onto a towel.


2. Chocolate cake

Recipe provided by Beryl Pakes

125gm dark chocolate  *

100gm caster sugar *

100gm butter *

1 table spoon Grand Marnier *

1 table spoon strong black coffee *

3 eggs separated

100gm ground almonds (or SR flour)

Mix marked ( *) ingredients in a double boiler. Remove from heat.  Add almonds, then egg yolks.

Beat egg whites & fold into mixture. Pour into a greased 20 cm cake dish.  Then cook at 180 C for about 45 minutes
